Marks & Spencer has been on a fact-finding trip to Tokyo in search of the firm’s new range of sweets, The Independent reported on 4 January.

James Campbell, dessert product developer, tasted 140 Japanese desserts over one week in an effort to uncover “the next big trend for 2016”.

Renowned as world leaders in the art of patisserie, Japan’s influence in the high-street brand’s puddings is expected to include the use of yuzu and a focus on seasonality, which is key to Japanese cooking.
